Ingredients for 4 servings:

  • 200 g wheat flour
  • 1 egg(s)
  • 150 g carrot(s)
  • 2 garlic cloves or 1 tsp garlic granules
  • 2 spring onions
  • 1 handful of bean sprouts
  • 1 small can of corn
  • 50 ml vegetable stock
  • some vegetable stock powder
  • 1 tsp black pepper, freshly ground
  • 1 pinch of salt
  • 200 ml vegetable oil

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Indonesian vegetable fritters, vegetarian

Peel and grate the carrots. Wash the spring onions and slice into small rings. Peel and press the garlic cloves or chop very finely. Combine the carrots, spring onions, garlic, approximately 50 ml of vegetable stock, pepper, and salt in a bowl and mix. Whisk the egg, add it, and mix everything well. Then add the flour and stir well until it forms a smooth mixture. Fold in the bean sprouts and corn and season with salt, pepper, and vegetable stock powder. Carefully drop the batter mixture, a spoonful at a time, into hot oil and fry until the patties are lightly browned. In Indonesia, these vegetable fritters are eaten with fresh chilies. For European palates, I recommend sweet chili sauce or tzatziki or herb curd.
