Banana Amarena Bread

Ingredients for 1 servings:

  • 3 tbsp, heaped chia seeds
  • 350 g almond milk (almond drink)
  • 650 g banana(s), peeled and weighed
  • 265 g wholemeal flour
  • 1 tbsp baking powder
  • 200 g amarena cherries, drained
  • ½ cup of amaretto cherry juice
  • some coconut oil, softened, for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 30 minutes

very tasty for breakfast

Soak the chia seeds in 150g of almond milk for 20 minutes. Quarter the bananas lengthwise and slice thinly. Stir in the swollen chia seeds. Mix the flour and baking powder. Alternately stir in the remaining almond milk, amarena juice, and flour vigorously with a wooden spoon. The banana pieces should be slightly broken up. Finally, carefully fold in the amarena cherries. Grease a 30cm loaf pan with coconut oil, pour in the batter, and bake in the oven at 180°C (top/bottom heat) for about 60-70 minutes. Be sure to do a skewer test. Let cool slightly in the pan and then transfer to a wire rack to cool.
