Banana bread or muffins

Ingredients for 1 servings:

  • 100 g walnuts
  • 300 g corn, ground OR
  • 300 g flour *
  • 40 g raisins
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • Nutmeg, grated
  • 500 g banana(s), ripe (leopard type)
  • 120 g margarine, unhydrogenated
  • 80 g cane sugar OR
  • 120 g sugar
  • ¼ tsp vanilla powder (bourbon)

Sort out 20 (bread) / 12 (muffins) walnut halves, chop the rest finely. Beat margarine and sugar until fluffy, add bananas and mix. Mix flour with baking powder, vanilla powder, salt and nutmeg + chopped walnuts, add and mix well. For bread: 20 walnut halves. Pour batter into a loaf pan lined with baking paper and cover with the walnut halves. Bake in a preheated oven at 200°C / Gas Mark 3 for 60-70 minutes. For one loaf pan = about 15 slices. For muffins: 12 walnut halves. Grease 1 baking tray (12 holes) well with margarine, spread the batter, and place half a walnut on each one. Bake in a cold oven at approx. 140°C fan-assisted oven for approx. 40 minutes, test with a needle. Very sweet!! * if using “normal flour”, add 1 egg to the batter.
