Banana chili soup

Ingredients for 4 servings:

  • 1 tbsp oil, neutral (e.g. peanut oil)
  • 50 g spring onions, with green parts, sliced
  • 25 g garlic, sliced
  • 200 ml coconut milk
  • 400 ml vegetable stock
  • ¼ tsp white pepper
  • 3 tsp fish sauce, Thai, or soy sauce
  • ¼ tsp salt
  • ½ tsp sugar
  • 1 large banana(s), peeled, cut diagonally into thin slices
  • 1 large chili pepper(s), red, seeds removed, diagonally cut into rings
  • Spring onion(s), rings

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Heat the oil in a pan and briefly fry the spring onions and garlic for 30 seconds. Add all the remaining ingredients, except the banana and chili rings, and cook for 5 minutes. Blend the mixture with 3/4 of the banana slices and the chili rings until smooth. Add the remaining banana slices and heat through for a few minutes. Garnish with spring onion rings to serve.
