Banana – Nectarine – Peach – Chutney

Ingredients for 1 servings:

  • 600 g banana(s), ripe, mashed
  • 5 peaches or nectarines, mixed, ripe, juicy
  • 3 large onions, white
  • 440 ml orange juice
  • 220 ml apple cider vinegar
  • 200 g raw cane sugar
  • 1 tsp curry, hot
  • 1 tsp, heaped pepper, white
  • 2 tsp sea salt
  • 1 tsp ground ginger

Chop the fruit and onion into small pieces and place in a saucepan. Pour over the orange juice, add the apple cider vinegar, and the spices. Stir in the sugar. Let everything simmer. This can take a while. Pour hot into clean twist-off jars. Let cool. After 6-8 weeks, the chutney will be ready and can be used with white meats, cheese, or as a base for dressings and marinades. This chutney is also delicious instead of mustard with sausages, patties, or meatballs, or as a topping for bread.
