Ingredients for 10 servings:
- 200 g flour
- 100 g butter
- 3 ½ liters of cold broth
- 200 g cheese, grated Sbrinz or sour milk cheese (Harzer)
- some salt and pepper
Instructions
Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes
Melt the butter in a pan, add the flour, and fry until browned. Deglaze with the cold broth and simmer gently for about an hour (allowing the flour flavor to cook off a little). Season well with salt and pepper. Serve in soup bowls and top with the cheese. This soup is a winter staple and also a great light meal for those with stomach flu.
