Ingredients for 4 servings:

  • 60 g sugar
  • 60 ml water
  • 20 large basil leaves, fresh
  • 2 medium-sized lemons
  • 1 m.-large lime(s)
  • 600 ml mineral water, still or carbonated
  • n. B. mint leaves

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 30 minutes

First, bring the sugar and 60 ml of water to a boil in a saucepan until the sugar has completely dissolved. Meanwhile, thoroughly grind the basil leaves in a mortar and pestle until some juice runs out. Add this to the still-hot sugar solution. Let the mixture steep for at least an hour, or longer for a better and more intense result. Squeeze the juice from the lemons and limes, collect it, and mix it with 600 ml of cold mineral water. Pour the sugar solution through a fine sieve to filter out the small basil particles and collect the pure juice. If you like, press the basil particles further with a spoon. Now mix the basil-sugar solution with the citrus water and chill. Serve the basil lemonade with mint leaves.
