Ingredients for 6 servings:

  • 1,000 g white cabbage
  • 100 g bacon, streaky, diced
  • lard
  • 2 tsp sugar
  • ¼ liter meat broth
  • 2 tbsp white wine vinegar
  • Caraway seeds
  • Salt

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Cut the white cabbage into strips. Heat the lard and fry the bacon until crispy. Stir in the sugar and let it caramelize. Add the white cabbage strips and braise briefly. Pour in the meat broth and white wine vinegar. Sprinkle the caraway seeds over the cabbage and simmer for 35 minutes with the lid on and reduce the heat to low. Remove the lid and cook for about 5-10 minutes over medium heat, until the cabbage is soft and the liquid has evaporated. Season lightly with salt. 270 kcal per serving.
