Ingredients for 3 servings:
- 600 g pork schnitzel
- n. B. BBQ rub of your choice
- 2 onions, halved in thick slices
- 3 bell peppers
- 60 g BBQ sauce
- 50 g tomato paste
- 10 g honey
- 1 tsp salt
- 30 ml balsamic vinegar
- 2 packs of bacon, cut into strips
- some pepper
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 20 minutes
First, sprinkle the meat on both sides with BBQ rub and massage it in lightly. Wash and deseed the bell peppers and cut into halved strips. Peel the onions and cut them into halved strips. For the sauce, mix all the ingredients in a bowl and season with pepper. Now line a roasting pan, Roman pot, Ultra or a casserole dish with a lid with a pack of bacon. Add the seasoned meat, onion and then the bell pepper strips. Finish with the sauce and spread it all over. Cook in a hot oven at 175°C fan-assisted for 1 hour and 40 minutes until tender. After this time, cover with the remaining pack of bacon. Return to the oven at 200°C fan-assisted for another 20 minutes.
