Beans – Tomatoes – Salad

Ingredients for 6 servings:

  • 300 g beans, white, dried
  • Salt
  • 6 tbsp olive oil
  • 5 tbsp vinegar
  • pepper
  • 2 garlic cloves, finely chopped
  • 500 g tomatoes
  • 100 g olives, stuffed with peppers
  • 2 onions, red

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Soak the beans overnight and boil them in salted water for about 1 1/2 hours the next day until tender. Combine olive oil, vinegar, pepper, and the grated garlic cloves to make a sauce and pour over the warm beans. Mix well, cover, and let stand in a cool place for a few hours. Wash the tomatoes and cut them into eighths. Halve the olives. Peel the onions and slice them thinly. Add everything to the beans, mix well, and serve.
