Bear’s Garlic Carbonara

The perfect bear’s garlic carbonara recipe with a picture and simple step-by-step instructions.

  • 0,5 bunch Wild garlic fresh
  • 100 g Bacon slices
  • 250 g Pasta
  • 120 ml Cream
  • Salt
  • 2 Eggs
  • 25 g Freshly grated Parmesan
  • Pepper from the grinder
  1. Wash the wild garlic and spin dry. Cut the leaves crosswise into finger-width strips up to the base of the stalk. Cut the bacon crosswise into 1cm thick pieces.
  2. Cook the pasta in plenty of boiling salted water according to the instructions on the packet.
  3. In the meantime, leave the bacon in a pan without fat and stir in the wild garlic, remove the pan from the hob.
  4. Whisk the cream, eggs and Parmesan. Drain the pasta, drain briefly and return to the hot saucepan. Carefully stir in the cream cheese. Add the bacon and wild garlic mixture, sprinkle with pepper from the mill and a little Parmesan and serve.
