Bea's applesauce cake

Ingredients for 1 servings:

  • 600 g apple sauce, chunky or completely pureed
  • 120 g margarine
  • 150 g raw cane sugar
  • 250 g spelt flour type 630
  • 1 tsp cream of tartar baking powder
  • 1 tsp cinnamon powder
  • ½ tsp nutmeg powder
  • ¼ tsp clove powder
  • 80 g raisins
  • 100 g coconut flakes
  • powdered sugar for sprinkling
  • Fat for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Weigh the applesauce. Melt the margarine and stir it into the applesauce. Add the raw cane sugar. Mix the spelt flour with the baking powder and fold it into the apple mixture. Add the spices, raisins, and coconut flakes. Preheat oven to 150°C (fan). Pour the cake batter into a greased springform pan and bake for 35 minutes. Do the skewer test. If only a little batter sticks to the skewer, bake for a further 5-10 minutes at 170°C (350°F). Decorate the cake with powdered sugar, if desired. Chopped almonds or nuts can be used instead of the coconut flakes. The cake is also delicious warm. Note: If the applesauce is rather mushy or runny, add a little more spelt flour. Apple compote is also a good alternative.
