For a long time, the consumption of beef offal was considered a health risk because, for example, heavy metals have accumulated in the liver. Because the pollution of the environment has been declining for a long time, the innards of farm animals can now be consumed without hesitation. Exceeding the pollutant limits is only rarely and to a very small extent. Beef offal is therefore generally considered to be healthy food that provides the body with many important nutrients, such as vitamin A, folate (folic acid), zinc, and iron.

However, due to the high vitamin, A content, eating liver during pregnancy is potentially problematic, as the unborn child can be harmed if the vitamin intake is too high. For this reason, expectant mothers should completely avoid liver in the first trimester of pregnancy, and later it should be on the menu at most once a month.

Depending on the beef offal to be eaten, it may need to be prepared before cooking so that it is edible and safe to eat. The kidneys should be irrigated beforehand to flush out any urine. The gallbladder and larger vessels must be removed from the liver. The heart, in turn, contains hard-walled blood vessels, which should also be severed before preparation.
