Ingredients for 4 servings:
- 2 m.-sized onion(s)
- 250 g diced ham
- 2 garlic cloves
- 3 tomatoes, dried in oil
- 4 cucumber(s)
- 4 beef roulades
- Mustard
- Salt
- Pepper, from the mill
- Paprika powder, sweet
- 2 tbsp oil
- 250 ml red wine
- some sauce thickener
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 40 minutes
Peel and finely dice the onion and garlic. Slice the sun-dried tomatoes into strips. Place everything in a pan and fry until golden brown, then let cool. Finely dice the cucumber and add it to the cooled ingredients, then mix everything well. Brush the roulades with mustard and season with salt, pepper, and paprika. Spread the prepared filling evenly among the roulades, roll them up, and secure them with skewers. Heat oil in a pan and sear the roulades on all sides. Deglaze with red wine and water and simmer over low heat for 1.5 to 2 hours, depending on the size of the roulades. Remove the roulades from the sauce and thicken with a little sauce thickener, if desired.
