Beef roulades in red wine sauce à la Gabi

Ingredients for 4 servings:

  • 4 beef roulade(s) from the topside
  • 4 slices of bacon
  • 1 tbsp mustard, hot
  • Salt
  • Black pepper, freshly ground
  • 40 g lard
  • 3 medium-sized onions, coarsely chopped
  • 2 tbsp tomato paste
  • 125 ml red wine
  • 200 g minced meat, half and half
  • 2 tbsp green olives, chopped
  • 3 shallots, chopped
  • 1 egg(s)
  • 1 clove(s) garlic, pressed
  • 4 gherkins
  • Salt
  • Black pepper, freshly ground

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 20 minutes; Total time approx. 1 hour 50 minutes

Beef puffs

Season the roulades on both sides with salt and pepper, spread with mustard, and top with bacon strips. Mix the minced meat with the olives, shallots, garlic, and egg, and season with salt and pepper. Spread the mixture over the bacon strips, place a gherkin in the center of each, roll up the roulades, and tie with kitchen string. Heat the lard in a casserole dish and brown the roulades on all sides. Add the onions and tomato paste, sauté briefly, pour in the red wine, and cover and simmer over low heat for 60-80 minutes until tender. Then remove the roulades and keep warm on a preheated plate. Strain the sauce through a sieve, season to taste, and pour over the roulades. Serve with mashed potatoes.
