Ingredients for 4 servings:
- 1 kg roast beef or boiled beef
- 1 bunch of soup vegetables
- 1 jar of remoulade
- 1 cup sour cream
- 1 cup whipped cream
- 4 eggs, hard-boiled
- 1 bunch of chives or 1 pack of frozen chives
- 1 bunch parsley or frozen parsley
- Salt and pepper, black
- 1 cube of stock, if necessary

can be prepared well, therefore a great guest meal
Wash and dry the beef, season with salt and pepper, and add it to a pot of boiling water. Trim, wash, and dice the vegetables. Skim the skin off the meat and add the vegetables, along with the stock cube if desired. Simmer gently for 90-120 minutes. For the remoulade sauce, combine the cream, sour cream, and remoulade. Finely chop the fresh herbs and add them. Slice the eggs lengthwise and crosswise using an egg slicer and add them to the sauce, then season with salt and pepper. Slice the cooked meat and serve with the sauce. Boiled potatoes, baguette, and a green leaf salad go well with this. Tip: Use the stock as a starter or for another purpose. The meat and sauce can be prepared the day before, and if there are leftovers, you can chop the meat and add it to the sauce and serve it as a salad, which you can then modify or extend with cooked peas, etc.
