Ingredients for 4 servings:

  • 4 tbsp olive oil
  • 5 tbsp balsamic vinegar
  • 2 tsp mustard (Dijon)
  • 3 tsp honey
  • 1 handful of fresh basil
  • salt and pepper
  • 5 beetroot tubers
  • 3 carrots
  • 2 apples
  • ½ leaf lettuce
  • 1 package of sheep’s cheese

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

If you didn’t buy the beets pre-cooked, you should first cook them and let them cool. Then, split each bulb and slice them. Clean or peel the carrots and then grate them. Slice or dice the apples, depending on your preference. Wash the lettuce and dice the feta cheese. Mix the olive oil, balsamic vinegar, Dijon mustard, honey, basil, salt, and pepper to make a vinaigrette. Pour everything into a bowl and stir well. Not only does it taste delicious, it looks great too! Enjoy!
