Ingredients for 4 servings:

  • 3 bell peppers, 1 each red, yellow, green
  • olive oil
  • Pepper, from the mill
  • Salt

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

a great side dish to minced meat dishes

Wash, trim, and finely chop the bell peppers. Pour enough olive oil into a pot to just cover the bottom. Add the bell peppers and heat vigorously. Deglaze with water (about 1 cup). Simmer until the water has almost evaporated. Add freshly ground pepper and salt to taste. We served it with ham, meatballs, and pasta.
