Berlin pea soup with bacon

Ingredients for 4 servings:

  • 500 g peas, yellow
  • 200 g smoked and streaky bacon
  • 1 onion(s)
  • Soup vegetables
  • e.g. potato(s)
  • pepper
  • marjoram
  • savory

Instructions

Working time approx. 50 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 50 minutes

Briefly bring the peas, soaked overnight, to a boil in the soaking water with the bacon, onion, and a little uncut soup greens, then simmer gently over low heat. Add more water as needed. Add the diced potatoes during the last 15 minutes. Before serving, remove the bacon, strain about 3/4 of the soup through a sieve, chop the bacon, and return it to the soup. Season to taste with pepper, marjoram, and savory.
