Ingredients for 4 servings:
- 1 kg meat (bison roast)
- Salt
- pepper
- Thyme
- rosemary
- 1 onion(s)
- 2 cloves garlic
- 2 cardamom seeds
- 5 juniper berries
- 3 carnations
- 500 ml broth
- 200 ml red wine
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Wash the meat and pat dry. Season with thyme, rosemary, salt, and pepper. Heat olive oil in a roasting pan and sear the meat on all sides. Roughly dice the onion(s) and garlic, add to the meat, and sauté briefly. Pour over the red wine and stock. Crush the cardamom pods and add to the stock with the remaining ingredients. Cover the roasting pan and roast in the oven at 200°C for 45-60 minutes (depending on how cooked you want it). Baste with a little stock from time to time. After cooking, keep the roast warm and strain the stock through a sieve. Bring to a boil, season with salt and pepper. Thicken slightly with a sauce thickener, if desired. This dish is well suited to the Tupperware Microwave Plus.
