- 250 g sugar
- 2 eggs
- 250 g flour (type 405)
- 1 tbsp anise
- 1 tsp. baking soda
- 1 lemon(s), grated peel

Anise biscuits
Beat the eggs and sugar until frothy. Knead in the flour, anise seeds, lemon zest, and baking soda. Form into finger-thick rolls, cut off 5 cm long pieces, and shape them into half-moons. Make three diagonal cuts along the rounded side. Place the cookies on a floured baking sheet and let them dry in a warm place overnight. Place on the middle rack of a preheated oven at 180°C and bake for about 25 minutes. Makes about 35 cookies.
