Black pudding casserole

Ingredients for 4 servings:

  • 750 g potatoes
  • 2 liters of water
  • 500 g apples
  • 2 onions
  • 2 cloves garlic
  • 2 tbsp oil (rapeseed oil)
  • 500 g smoked black pudding
  • Salt
  • pepper
  • 100 ml cream
  • marjoram
  • 50 g cheese (Emmental)
  • Butter, in flakes
  • 100 ml sour cream
  • ½ bunch parsley

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Boil the potatoes for about 25 minutes until soft, drain, peel and allow to cool. Then press them through a potato ricer. In the meantime, peel the apples, quarter them and slice them. Peel the onions and garlic and finely dice them. Heat the oil in a pan and briefly sauté the onions, garlic and apples. Slice the black pudding and set aside. Place the mashed potatoes in a bowl, mix with salt, pepper, cream and marjoram and season to taste. Layer the mashed potatoes, black pudding, sour cream and apple pieces in a greased casserole dish. Grate the cheese and sprinkle it over the casserole. Sprinkle with butter and bake in a preheated oven at 200°C for 30-40 minutes. Sprinkle the casserole with parsley and serve.
