This healthy and delicious recipe is a full load of vegetables and plenty of protein. Cod not only tastes delicious but is also uncomplicated to prepare. The fish is low in fat but has a slightly spicy flavor. This makes it a convincing choice in many kitchens.
Ingredients For 2 People
What you need:
- 400 g Fennel
- 2 carrots
- 1 stick of celery
- 1 onion
- 1 clove of garlic
- 2 TBSP. Olive oil
- 1 TBSP. tomato paste
- 200 ml Fish stock
- 300 ml vegetable stock
- 1 bay leaf
- 3 allspice seeds
- 0,5 bunch of flat-leaf parsley
- salt, pepper
- 350 g Cod fillet
- 250 g Tomatoes, small
- 50 ml Marsala
Preparation
- Fennel, carrots, celery, onion, garlic
Rinse fennel, quarter, and cut out the hard stalk. Peel the carrots and roughly dice both. Rinse celery, peel onion, and garlic. Finely dice everything. - Oil, chopped vegetables, tomato paste, Marsala, tomatoes, stock, broth, bay leaves, and allspice.
Heat 1 tablespoon oil in a saucepan, and brown vegetables slightly. Stir in tomato paste, and continue to fry for 2 minutes. Add Marsala, and reduce briefly. Add tomatoes, stock, broth, bay leaf, and allspice, and simmer for about 15 minutes. - Parsley, salt, pepper, cod, olive oil.
Chop parsley. Season soup with salt and pepper. Cut fish fillet into large cubes, add to soup, and let simmer for about 5 minutes. Divide among plates, drizzle with remaining olive oil, and sprinkle with parsley.
