Blueberry-Lime Cake with Yogurt

Ingredients for 1 servings:

  • 5 eggs
  • 125 g natural yogurt
  • 180 g sugar
  • 2 packets of vanilla sugar
  • 200 g butter, soft
  • 1 packet of baking powder
  • 400 g flour
  • 1 pinch of salt
  • 180 g blueberries
  • Fat and flour for the mold
  • 2 limes, zest and juice
  • 200 g powdered sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

Preheat oven to 180°C. Grease and flour a cake pan of your choice. Beat the butter and sugar until fluffy, gradually add the eggs and the remaining ingredients, except for the berries. Finally, carefully mix in the berries. Pour everything into the pan and bake for about 50 minutes. Don’t forget to do the toothpick test. Turn the cake out and spread with the mixed glaze.
