Ingredients for 4 servings:

  • 4 m.-sized potatoes
  • 1 bunch of spring onions
  • some milk
  • some salt
  • 1 pack of spring roll pastry sheets (frozen)
  • some oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Afghan dumplings with potato filling

Peel and quarter the potatoes and boil in salted water until tender. Drain and mash with a little milk. Season with salt. Finely chop the spring onions, fry in a little oil, and mix with the mashed potatoes. Place two sheets of dough on top of each other and add 2 teaspoons of the mashed potatoes to each. Fold the pockets like a letter, moisten the tip with a little lukewarm water, and press down. Place on a baking sheet lined with baking paper, brush with a little oil, and bake for about 30 minutes at 180 degrees Celsius. The bolani will be super crispy in the oven and also contain less fat than if cooked in a pan. Serve with natural yogurt. Nushé dshan!
