Ingredients for 4 servings:
- 600 g beef heart
- 120 g bacon
- 2 onions
- 1 parsley root(s)
- 2 carrots
- 2 tbsp tomato paste
- 100 g crème fraîche
- salt and pepper
- Paprika powder
- Parsley
- marjoram
- Fat for frying

Working time approx. 25 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 15 minutes

Cut the heart into large pieces, stud them with bacon, and fry. Chop the vegetables into small pieces and fry them with the bacon. Season everything, add a little water, and let the heart and vegetables simmer for about 40 minutes. Finally, stir in the tomato paste and crème fraîche.
