Brawn from Wild Boar

The perfect brawn from wild boar recipe with a picture and simple step-by-step instructions.

Spices:

  • 3 small Carrots
  • 0,5 pod Red peppers
  • 2 Leek onions
  • 1 Tl Salt
  • 3 Bay leaves
  • 0,25 Tl Pimento
  • 0,25 Tl Mustard seeds
  • 6 El Vinegar, more or less to your own taste
  • 3 Pinches Sugar
  • 1,5 bag Agartine or 9 sheets of gelatin
  1. Cook the meat with the mustard seeds, allspice, sugar, salt and vinegar. Also add the bay leaves.
  2. Chop the vegetables, thinly slice the carrots and add to the meat just before the end of the cooking time.
  3. Then remove 700 ml of the broth and cook the argartine with the broth as instructed. Put the previously chopped meat in glasses, put the vegetables on top and fill up with the tray. Close the jars immediately, let them cool and put them in the refrigerator overnight.
  4. This brawn tastes delicious and can be made with many types of meat. We had fried potatoes with it.
