Ingredients for 2 servings:
- 2 slices of whole-grain toast
- 2 garlic cloves
- 3 spring onions
- 100 g cocktail tomatoes
- ½ bunch parsley
- 100 g lean ham
- 3 eggs
- 1 tbsp olive oil
- salt and pepper
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
Preheat the oven to 200°C top/bottom heat (180°C fan/gas mark 3-4). Cut the bread slices into cubes. Peel and slice the garlic. Clean and slice the spring onions. Wash and halve the tomatoes. Chop the parsley. Cut the ham into strips. Place the bread cubes on a baking tray and toast in the preheated oven for about 7 minutes until crispy. Whisk the eggs, season with salt and pepper. Add the spring onions, parsley, and ham and mix. Heat the oil in a non-stick pan. Briefly fry the garlic. Remove the bread cubes from the oven and sprinkle them into the pan. Pour the egg mixture over them. Place the tomatoes in the egg mixture. Cover the bread tortilla and let it set over low heat. Serve immediately.
