Breaded potatoes à la Didi

Ingredients for 4 servings:

  • 4 large potatoes, e.g. grilled potatoes
  • 2 m.-sized eggs
  • Flour
  • Breadcrumbs
  • Cayenne pepper
  • Salt
  • Paprika powder, sweet
  • Paprika powder, hot
  • Sunflower oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Clean the potatoes and boil them with their skins on for about 30 minutes. Then let them cool, peel them, and cut them lengthwise into approximately 1 cm thick slices. Season with salt, cayenne pepper, and paprika. Coat the seasoned potato slices first in flour, then in the beaten eggs, and finally in breadcrumbs, pressing the breadcrumbs firmly into the surface. Fry them in a non-stick pan with a little sunflower oil until golden brown on both sides.
