Brisket of Beef Braised in Cider with Horseradish and Apple Crust
The perfect brisket of beef braised in cider with horseradish and apple crust recipe with a picture and simple step-by-step instructions.
Brisket:
- 3 Onions
- 1 size Clove of garlic
- 3 Carrots
- 1 pole Leek
- 1,2 kg Beef breast (rib)
- 1,2 kg Seasoned salt from my KB
- 1,2 kg Garlic pepper from my KB
- 2 tbsp Clarified butter
- 300 ml Cider
- 600 ml Vegetable broth
- 2 Bay leaves
- 4 Allspice grains
- 4 Cloves
- 4 Juniper berries
- 1 tsp Peppercorns
- 3 tbsp Granulated Dijon mustard
Apple and horseradish crust:
- 4 Fresh shallots
- 4 Horseradish root
- 1 Tart apples
- 2 tbsp Lemon juice
- 5 tbsp Butter
- 5 tbsp Food starch
Brisket: oven convection 160 °
- Roughly chop the onions and garlic. Peel the carrots, clean the leek and roughly dice. Rinse the leek with cold water. Dry the meat and season well with seasoning salt and garip pepper. Heat the lard in the roaster, sear the meat in it, remove it and coat the meat with mustard. Roast the carrots, onions, garlic and leek in the remaining frying fat. Deglaze with the cider, then add the stock, bay leaves, allspice, cloves, juniper berries and pepper. Place the meat on top of the vegetables, put the roast in the oven, simmer at the bottom and cover it for 2.5 hours.
Apple and horseradish crust:
- In the meantime, peel the horseradish and shallots. Finely grate the horseradish and cut the shallots into thin rings. Wash, quarter and grate the apple. Marinate in lemon juice!
- Then brown the butter and roast the shallots in it a little, then add the horseradish. Finally, squeeze out the apple and fold in. Season with salt and garlic pepper!
Beef brisket: oven to 180 degrees / convection
- Take the beef brisket out of the oven, cover with the horseradish mixture and bake in the oven until crispy! Prepare side dishes on the side. With us potatoes.
- In the meantime, pour the brew and reduce a little. Possibly bind with a little cornstarch! Season to taste with seasoned salt, garlic pepper and pepper. Take the beef brisket out of the oven, cut into slices and serve with potatoes and sauce!
