Broccoli and potato soup from the Thermomix

Ingredients for 4 servings:

  • 500 g broccoli
  • 2 large potatoes
  • 2 onions
  • 2 garlic
  • 800 ml vegetable stock
  • 1 dashes lemon juice
  • 1 pinch of nutmeg
  • 1 bunch of dill
  • 100 ml cream
  • salt and pepper
  • 1 tbsp herb melted cheese

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Chop the onions and garlic for 8 seconds/speed 6. Wash the broccoli and trim the florets. Peel and finely chop the potatoes, place both in the mixing bowl, and chop for 8 seconds/speed 6. Add the broth and cook for 20 minutes/100°C/speed 2. Finally, add the nutmeg, dill, lemon juice, cream, processed cheese (if desired), and salt and pepper. Blend for 30 seconds – 1 minute/speed 6, then heat briefly for another 1 minute/100°C/speed 2. If the soup is too thick, simply top up with broth. Our children also like it, even though they don’t like broccoli.
