Ingredients for 4 servings:
- 500 g broccoli, also frozen
- 1 small can of corn (one mini-can)
- 1 bell pepper(s), red
- 125 g ham, cooked
- 1 cup sour cream
- 1 cup sour cream or 10% Greek/Turkish yogurt
- dill
- Parsley, flat
- Salt
- pepper
Instructions
Working time approx. 15 minutes; Rest time approx. 30 minutes; Total time approx. 45 minutes
with sour cream, corn, peppers and cooked ham – quick to make and low in fat
Pour hot water over the broccoli and let it sit for a short while. It should still be crunchy! Chop the florets into small pieces, and the stems even smaller. Drain the corn. Dice the bell peppers and the cooked ham. Mix the sour cream and sour cream with plenty of dill and parsley to make a salad dressing, and season generously with salt and pepper. Mix all the ingredients together and let it sit in the fridge for a while. Done! I usually use frozen broccoli, dill, and parsley. Fresh is definitely better, but it’s not as quick to prepare and might not always be readily available!
