Broccoli zucchini spelt casserole

Ingredients for 2 servings:

  • 200 g broccoli, frozen
  • 1 small zucchini, sliced ​​lengthwise, halved
  • 1 half onion(s), cut into strips
  • 1 tsp coconut oil
  • 100 ml whipped cream
  • 1 tsp curry
  • 1 can spelt (140 g), cooked
  • some gratin cheese, spicy, grated
  • some salt and pepper
  • some chili flakes from the mill

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Preheat oven to 200°C fan/convection oven. Cook broccoli in salted water for about 4 minutes, then drain. Sauté onion strips in a pan with hot coconut oil until translucent. Add zucchini halves and fry for a few minutes. Season with salt, pepper, chili flakes, and curry powder. Pour over the cream. Transfer everything to a suitable baking dish, then stir in the broccoli and spelt. Sprinkle with seasoned gratin cheese. Bake in the hot oven for 15 minutes.
