Ingredients for 2 servings:
- 200 g broccoli, frozen
- 1 small zucchini, sliced lengthwise, halved
- 1 half onion(s), cut into strips
- 1 tsp coconut oil
- 100 ml whipped cream
- 1 tsp curry
- 1 can spelt (140 g), cooked
- some gratin cheese, spicy, grated
- some salt and pepper
- some chili flakes from the mill
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Not only is it healthy, it also tastes good!
Preheat oven to 200°C fan/convection oven. Cook broccoli in salted water for about 4 minutes, then drain. Sauté onion strips in a pan with hot coconut oil until translucent. Add zucchini halves and fry for a few minutes. Season with salt, pepper, chili flakes, and curry powder. Pour over the cream. Transfer everything to a suitable baking dish, then stir in the broccoli and spelt. Sprinkle with seasoned gratin cheese. Bake in the hot oven for 15 minutes.
