Bruschetta pasta

Ingredients for 4 servings:

  • 400 g spaghetti or other pasta
  • 800 g plum tomatoes
  • 30 g basil leaves
  • 6 tbsp olive oil
  • 2 garlic cloves
  • 1 tsp sugar
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Wash the tomatoes and chop very finely. In a bowl, toss the tomatoes with olive oil, garlic, and basil. Season with salt, pepper, and sugar. Let stand until the pasta is cooked. Cook the pasta in a large pot of salted water according to the package instructions. Shortly before the end of the cooking time, remove a ladleful of the pasta water. Drain the pasta and toss it with the tomato mixture and the pasta water. Serve with baguette or a fresh salad. It also tastes delicious with various toppings: – Grated Parmesan cheese over the pasta. – Added mozzarella in pieces. – Chicken breast fillet – 500g, fried and torn into small pieces with 2 forks.
