Bulgur Salad When It Has to Be Done Quickly

  • 300 g Bulgur
  • 1 dash of lemon juice
  • 1 tube Tomato paste
  • 1 tbsp Hot paprika powder
  • 1 tbsp Sweet paprika powder
  • 1 bunch Spring onions
  • 1 bunch Parsley
  • 7 tbsp Flavorless oil
  • Boiling water
  • Chilli flakes as needed


  • Put the bulgur in a bowl and fill it with boiling water so that it is just covered. Salt well and let soak for about 8-10 minutes. In the meantime, cut the spring onions into rings and chop the parsley (or use frozen parsley). Put the oil and the whole tube of tomato paste in the bowl and squeeze in the lemon juice. Then mix in the remaining ingredients. Once the bulgur is swollen, mix it all together, season it again - and you're done!
