Potato stew, old Viennese recipe

Peel and dice the potatoes, and boil them in salted water. Reserve half of the water. Chop the onion and sauté in plenty of oil (the bottom of the pot should be covered by a good 1-2 cm) until translucent. Season with salt, add the flour, and cook until lightly browned (a roux). Meanwhile, chop the gherkins and sausages, add them to the onions, then add the potatoes and stir. If it’s too thick, add more water; the desired consistency is mushy. Season with salt, garlic, and pepper, serve, and enjoy. This is great for larger groups; it’s a hit with kids and really inexpensive!
