Ingredients for 2 servings:

  • 900 g potatoes
  • ½ liter buttermilk
  • 100 g bacon
  • 2 m.-sized onion(s)
  • 1 tsp salt
  • 1 egg(s)
  • Caraway seeds
  • Linseed oil for the pans

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Peel and grate the potatoes, squeeze the excess water lightly, and mix in the buttermilk and finely chopped onions. Season with salt and caraway seeds to taste, then mix with the egg. Cut the bacon into small cubes and fry in a pan. Add half of it to the potato mixture and stir. Pour the finished mixture into two oiled, ovenproof pans and spread the remaining bacon on top. Bake at 200°C (top/bottom heat) for about 45 minutes until golden brown. Note from Chefkoch.de: Linseed oil is considered a very high-quality vegetable oil because it is rich in omega-3 fatty acids. These fatty acids are destroyed when heated to high temperatures and are partially converted into harmful trans fatty acids. The linseed oil not only loses its flavor but also its health benefits.
