  3. Resting and Serving:
    • Once the goat reaches an internal temperature of 140-145°F (60-63°C) for medium-rare or 150-155°F (65-68°C) for medium, remove it from the oven and cover it loosely with foil.
    • Let the goat rest for at least 15-20 minutes before carving. This allows the juices to redistribute within the meat, ensuring a tender and flavorful roast.
    • Carve the goat into serving portions and arrange it on a platter. Garnish with fresh herbs if desired.
