Camembert tart with grapes

Ingredients for 4 servings:

  • 120 g flour (wheat flour type 405)
  • 120 g flour (whole wheat flour)
  • salt and pepper
  • 3 tbsp water, ice cold
  • 100 g butter, cold
  • 150g Camembert(s)
  • 150 g crème fraîche
  • 2 eggs
  • 300 g grapes, small, mixed
  • Fat for the mold

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Knead the flour with 1 teaspoon of salt, 3 tablespoons of ice-cold water, and the butter cut into pieces. Roll out the dough and place it in a greased tart pan. Place it in the refrigerator. Preheat oven to 175°C. Dice the cheese and mix it with the crème fraîche using a hand blender. Mix in the eggs and season with salt and pepper. Wash the grapes. Spread the egg custard over the dough and arrange the grapes on top. Bake in the oven for 35-40 minutes. Let cool slightly and serve.
