High-quality kitchen knives are made from a special blade steel. Because this does not tolerate the dishwasher detergent well, the knives should not be cleaned in the dishwasher. Although the special steel is very hard and sharp, which is essential for professional knives, it is sensitive to acid in cleaning agents. The blade could start to rust after being treated in the dishwasher.
Instead, wash your kitchen knives by hand immediately after use with hot water and a little washing-up liquid. Then rinse with clear water and dry the knife immediately with a clean kitchen towel. Wipe the blade from the inside out to avoid injuring yourself. In order for the knives to stay sharp for a long time, they should also be sharpened regularly.
