Even if you should avoid storing bananas in the refrigerator: You can freeze bananas without any problems! With or without the skin, whole, sliced, ​​or pureed. So you don’t have to throw away fruit if you’ve bought too many and can’t use them right now. The practical thing about it is that fruits that are ripe or overripe are best suited for freezing anyway (i.e. those that you would otherwise have to use up quickly). They have the highest sugar content and taste sweet and aromatic after defrosting. Bananas that are still green or not very ripe come out of the freezer with little taste, as they cannot ripen there.

However, freezing bananas is not only a good way to prevent food waste: with the fruit in the freezer, nothing stands in the way of the spontaneous production of smoothies, banana cake, banana quark, or the trendy dessert nicecream (which is based on frozen bananas).

Freezing bananas: how it’s done

With skin: The easiest way to freeze bananas. However, it is not very easy to peel frozen bananas when you take them out of the freezer and want to use them up – so maybe not be the most sensible option if you want to be quick later. The fact that the skin turns brown or black when the banana is frozen doesn’t look so nice – but it doesn’t detract from the edibility and taste of the fruit.
Unpeeled: If you want to freeze more than one banana, first place the fruits on a plate or board a little apart from each other in the freezer for half an hour to pre-freeze and only then put them together in a freezer bag or container. This way the bananas in the ice cream don’t stick together and you can later remove them individually.
In slices: Again, you want to prevent the individual slices from sticking together as they freeze. Therefore, cut the banana into evenly thick slices and freeze them on a plate with a little space between them for half an hour. Later you can then remove exactly the number of slices you need from the freezer bag or container. This way of freezing bananas is particularly good if you often only need small quantities – for example for muesli, smoothies, or for baking.
Pureed: Add 1 tablespoon of lemon juice to every 250 ml of puree and mix thoroughly before freezing. Frozen mashed bananas are perfect for ice cream or semifreddo. If you want to use it for cooking, baking, or preparing baby food, it is best to let it defrost in the fridge.

Freeze Banana: Shelf Life

Bananas will keep frozen for three to four months. Exception: If you have frozen the fruit whole with the peel, the shelf life is reduced to around two months. To keep track of things, it is best to label the freezer bag with the date of the day you freeze the banana. Also, make sure that there is as little air as possible in the bag to avoid freezer burn: Although you can basically eat food with freezer burn without harming your health, most foods are then no longer particularly tasty.

Of course, there are also numerous ways to use ripe bananas directly. Because the riper bananas are, the sweeter they are. And this sweetness that develops during the ripening process can be used wonderfully in many dishes – some recipes call for brown, ripe bananas anyway. For example, in healthy smoothies, bananas often serve as the main sweetener, so you can use your overripe fruit for this. And banana bread only tastes really good when the bananas used are particularly ripe and almost mushy. You see: Due to their degree of ripeness, you can use the banana for a variety of recipe ideas!
