Canned goods are tins used to store and preserve foods such as fruits and vegetables. They are made of sheet metal (e.g. tinplate or tinned steel) and are hermetically sealed after filling by soldering or flanging. Only flawless raw materials are used for the production of canned vegetables. After washing, peeling, and chopping, they are usually blanched and then preserved.

As a rule, only water, a little salt, or sugar is added to the vegetables. The latter has a preservative effect and prevent the vegetables from spoiling. Pasteurization, i.e. brief heating to 60 to 90 degrees, kills germs.

Origin

The crucial idea of ​​heating food in airtight containers and thereby preserving it came to Paris confectioner Nicolas Appert in 1810. The British merchant Peter Durand implemented Appert’s idea in 1810 with tin canisters and thus invented the tin can.

Today, when preserving food, a distinction is made between:

– Fully preserved food with a theoretically unlimited shelf life.
– Semi-preserves that do not require sterilization and are preserved with acids and chemical preservatives. These products can often only be used for a few weeks to months.
– Three-quarter preserves that can be stored at a maximum of 20 °C for up to 12 months.

Season

Canned vegetables are seasonal and on the market all year round.

Canned vegetables can be used as an accompaniment to dishes, especially when a vegetable is not being harvested.

Storage

Once opened, canned goods can be stored in the refrigerator for about 2-3 days, provided they are transferred to suitable containers.
