Caramelized chicory

Ingredients for 4 servings:

  • 4 chicory
  • 30 g butter
  • 2 tbsp sugar
  • 100 ml orange juice (freshly squeezed)
  • Salt
  • pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

light vegetable dish, ideal as a side dish to duck

Remove the outer leaves from the chicory and halve the cob lengthwise. Cut out the white core in a wedge shape. Cut the chicory vertically into thin strips. Heat butter in a pan, sauté the chicory, sprinkle with sugar, and let it caramelize. Add the orange juice and simmer over high heat until almost evaporated. Season with salt and pepper.
