Ingredients for 4 servings:
- 200 g pearl barley
- 1 ½ liters of water
- 3 liters buttermilk, fresh
Instructions
Working time approx. 45 minutes; Total time approx. 45 minutes
Buttermilk soup
Slowly simmer the pearl barley in the water over low heat. Bring the buttermilk to a boil for about 1-2 hours, stirring constantly. Be careful, though; if you don’t stir constantly, the buttermilk will curdle. Add the pearl barley to the boiling buttermilk and simmer gently for another hour. Don’t forget to stir.
