Carrot, celery and apple salad

Ingredients for 2 servings:

  • 120 g carrot(s)
  • 200 g celeriac
  • 1 large apple or 2 small ones
  • 1 lemon(s), juice
  • 30 g walnuts
  • 100 g yogurt, 1.5%
  • 1 pinch(s) of sugar
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Variation of the Waldorf salad

Peel the carrots and coarsely grate them. Peel the celeriac and coarsely grate them. Drizzle with half the lemon juice. Peel the apple and coarsely grate it, then drizzle with the remaining lemon juice. Mix everything well. Roughly chop the walnuts and add to the salad. Make a dressing from yogurt, sugar, salt, and pepper and pour it over the salad. Mix everything well and let it sit for at least 1 hour.
