Ingredients for 1 servings:
- 400 g carrot(s)
- 3 organic oranges
- 350 g gelling sugar 2:1
- 200 g gelling sugar 3:1
- ½ tsp cinnamon powder
- ½ tsp cardamom powder
- some apple juice, optional
- 1 mango(s)
- ½ apple
- 3 bananas
- 3 tbsp lemon juice
Instructions
Working time approx. 45 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 50 minutes
For the base mixture, peel and grate the carrots, zest the oranges, fillet the oranges, and slice or juice them. If you like, you can sauté the grated carrots with 2-3 tablespoons of apple juice until slightly soft. Mix all ingredients. For version 1, peel the mango, first removing the stone, then cutting into pieces. Mix with the base mixture. For version 2, peel and slice the apple and banana, add the lemon juice, and mix everything with the base mixture. Puree both versions, leaving a little chunky if desired. Let stand for a few minutes, then cook according to the package instructions. Test for setting. If the setting test is successful, fill into jars and seal. Note: The carrots don’t add flavor, but they make the spread cheaper. The recipe can be easily adapted using various leftover fruits.
