Carrot soup with star anise

Ingredients for 4 servings:

  • 500 g carrot(s)
  • 25 ml olive oil
  • 50 cl cream OR:
  • 125 g potatoes
  • 50 cl broth
  • 4 star anise
  • 50 g butter
  • Salt
  • Pepper, white

Recipe from Friuli

Peel and finely chop the carrots, and cook in 20g of butter and the oil for about 5 minutes. Pour in the broth. Then add the cream and bring to a boil. For a lower-calorie dish, use potatoes instead of the cream (also peeled and finely chopped, of course). Cover and simmer over low heat for 1 hour until the carrots are soft. After 20-30 minutes of cooking, add the star anise (preferably in a spiced egg or tea bag). Once the carrots are soft, remove the star anise and purée the soup. Finally, add the remaining butter and season to taste with salt and pepper.
