Carrots – Spring Onions – Apple – Relish

Ingredients for 3 servings:

  • 300 g carrot(s) (prepared and weighed)
  • 300 g spring onions (prepared and weighed)
  • 200 g apples (prepared, weighed)
  • 200 ml vinegar (white wine vinegar)
  • 200 ml apple juice
  • 250 g gelling sugar, 3:1
  • salt and pepper
  • ½ tsp mustard seeds
  • Paprika powder

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Wash the carrots, drain, peel, finely dice, and weigh. Clean and wash the spring onions, halve lengthwise, thinly slice, and weigh. Wash the apples, drain, quarter, core, finely dice, and weigh. Bring the ingredients to a boil in a saucepan while stirring. Let it simmer for 10 minutes, stirring occasionally. Season the relish with the spices. Purée 1/4 of it. Bring everything back to a boil while stirring. Immediately fill prepared jars to the brim, seal, turn upside down, and let stand with the lid on for about 5 minutes.
