Cassava, Sweet Potato and Plantain Curry
The perfect cassava, sweet potato and plantain curry recipe with a picture and simple step-by-step instructions.
- 2 Manioc (cassava)
- 2 small Sweet potatoes
- 1 Plantain fresh
- 5 Tomatoes
- 1 Onion
- 2 Garlic cloves
- 2 tbsp Fresh ginger
- 2 tbsp Tomato paste
- 1 tsp Salt
- 2 tbsp Vindaloo curry spice mix
- 1 pinch Garlic pepper from my KB
- 1 pinch Seasoned salt from my KB
- 300 ml Water
- Telly cherry pepper
- Coconut oil
- Peel and dice the maniok, sweet potatoes and banana. Put the banana aside! Cook the cassava in boiling salted water for 5 minutes, then add the sweet potato and cook for another 10 minutes! Then strain and rinse with cold water!
- Peel the garlic, onion and ginger. Finely grate the garlic and ginger and cut the onion into fine wedges. Wash tomatoes, quarter them and remove the stems!
- Heat coconut oil and briefly roast the onions, garlic and ginger in it, then add the curry mixture and sizzle briefly, then stir together the tomato paste. Then fry the bananas and tomatoes briefly! Then deglaze with water and add the seasoned salu and garlic pepper! Smear everything for 10 minutes. Prepare rice on the side!
