Ingredients for 4 servings:
- 1 cauliflower
- 600 ml vegetable stock
- 100 ml cream or soy cream
- 2 oranges
- n. B. herbal salt
- 100 g almond sticks
- pepper
- Nutmeg, freshly grated
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Wash the cauliflower, break it into florets, set aside a few florets, and cook covered in the hot broth over medium heat for about 10 minutes. Puree the cauliflower with the broth and soy cream. Squeeze the oranges and add the juice and pulp to the soup. Season to taste with nutmeg, herb salt, and pepper. Add the cauliflower florets and reheat the soup. Serve sprinkled with slivered almonds.
